What does a percolator actually do?

A percolator breaks the smoke into many small bubbles instead of a few large ones, multiplying the surface area in contact with the water. More contact means more heat pulled out and more water-soluble particulate left behind, which is the whole mechanism behind "smoother." The word for it is diffusion, and every perc design is just a different strategy for making smaller bubbles.
The common designs are easy to tell apart through the glass. A tree perc hangs a ring of slitted arms into the water; a showerhead flares into a slitted dome; a honeycomb is a flat disc drilled with dozens of holes; a matrix stacks slits in a lattice. As a rule, more and smaller openings equal finer bubbles and smoother output, which is why a honeycomb's many small holes out-diffuse a classic three-slit downstem.
The trade-off is drag. Every hole the smoke must push through adds resistance, so a triple-perc showpiece demands noticeably more lung than a clean single-perc tube. Stacked percs also hit a point of diminishing returns: the second perc receives smoke the first has already cooled and washed, so it accomplishes a fraction of what the first did while adding its full share of drag and, later, its full share of cleaning.
That last part deserves honesty: percs are where resin goes to hide. Slits and lattices that make fine bubbles also clog first and rinse worst, so an intricate perc piece commits you to more frequent cleaning than a simple beaker. For most people the sweet spot is one well-made perc, not three.
